Pumpkin lentil curry with lemon-yogurt dip & gluten-free flatbread

I got inspired by the current season and decided to create something delicious. I like lentil curries because they are prepared pretty fast and you can vary the recipe really good. I open the fridge, have a look inside and then I decide which vegetables and ingredients I will use to cook something delicious. Furthermore, you can easily create it vegan, vegetarian or omnivore. The red lentils of Zwicky are absolutely great. They are cooked really fast and you don’t have to soak them the night before. I like to serve some self-made flatbread or and some rice with it.
